Sookie's Special Baked Pork Chops

You might remember that Sookie makes her delicious pork chops in both Book 5 and Book 8. In Book 5, she eats them alone with sides of a microwaved potato and peas.

In Book 8 she makes a very nice baked pork chop dinner for both Amelia and Octavia. In that meal , she also serves canned green beans and canned corn and also makes baked apples for dessert.

Tonight was my cooking night, and I'd decided to fix pork chops. I have a favorite homemade breading mix that I make in a huge batch, so I soaked the chops in milk and then dredged them with the mix so they were ready for the oven. I fixed baked apples stuffed with raisins and cinnamon and butter and popped them in to bake and I flavored some canned green beans and some canned corn and put them on low heat. After a while, I opened the oven to put in the meat. I thought about making biscuits, but there seemed to be more than enough calories on board.

Sookie's Bake Pork Chops

Ingredients
• 4 pork chops, 1-inch thick
• 1 cup milk ( or buttermilk)
• 1 cup unseasoned breadcrumbs
• 1 salt and pepper to taste
• 1/2 teaspoon garlic salt

Directions
1. Place pork chops and milk (or you can use buttermilk) in a zipper storage bag. Refrigerate for at least one hour, turning bag occasionally.

2. Line a baking sheet with non-stick foil, or spray with no-stick cooking spray.

3. In another zipper storage bag, or mixing bowl combine the remaining ingredients.

4. Remove pork chops from the buttermilk, dip each pork chop in the crumb mixture and place on prepared baking sheet.

5. Bake 425' for 40-45 minutes or until pork chops are no longer pink
