True Blood Recipe: Buster Boisseau's Peanut Butter Pie

This is just what you need to make to cool off on 4th of July weekend!

INGREDIENTS
. 1 (8 ounce) package cream cheese
. 1 1/2 cups confectioners' sugar
. 1 cup crunchy peanut butter
. 1 cup milk
. 1 (16 ounce) package frozen whipped topping, thawed
. 2 (9 inch) prepared graham cracker crusts .

DIRECTIONS
1. Beat together cream cheese and confectioners' sugar. Mix in peanut butter
and milk. Beat until smooth. Fold in whipped topping.
2. Spoon into two 9 inch graham cracker pie shells; cover, and freeze until
firm.

You can top with chopped peanuts, shaved chocolate , chocolate chips or drizzle with Hershey's syrup, goodness! Yum!

**International readers: confectioners sugar is the same as powdered sugar , Cool Whip is the common name for frozen whipped topping in US but 2 cups real sweetened whipped cream can be used, It's been suggested that crushed digestives or some other crumbly cookie could be used as a crust. Thanks Rose

I don't know what half of those ingredients are!

What is confectioners' sugar, is that like caster sugar?

Package frozen whipped topping, thawed - eh, pretty sure we don't have that in the UK.

What are these prepared graham cracker crusts?

Here in the south, confectioners' sugar is also known as powdered sugar
and graham cracker crusts are made
graham crackers crushed .

@Angela: Icing sugar is the same as confectioners' sugar.
You can substitute digestive biscuits for graham crackers. To make the crust, put several biscuits in a plastic bag, smash 'em up into fine bits with a rolling pin, or alternatively, you can pulse them in a food processor until they are the consistency of sand. Add melted butter to the biscuit debris until the mixture seems like wet sand, then press into a pie pan. Bake in a slow oven until the edge of the crust is just starting to brown (all you are doing is drying out the crust, not actually cooking it).
You can substitute sweetened whipped cream for the frozen topping. It will taste much better. Google "Cool Whip" if you want to see what "frozen whipped topping" is.

Enjoy!
