This is part II of Sam's chili recipes. What sets this apart from most other chili recipes is celery, sweetener ( jelly, molasses or honey) and the Louisiana seasoning.
Louisiana Swamp Gas Chili
1 cup green peppers, chopped
2 cups red onions, chopped
2 cups green onions, chopped
2 cups celery, chopped
1/4 cup jalapenos, chopped
4 tablespoons chill powder
2 teaspoons cumin
2 teaspoons mustard powder
1 teaspoon black pepper
2 teaspoon Louisiana Hot Sauce
1/4 cup Worcestershire sauce
1 8-ounce can tomato paste
1 cup cheap burgundy wine
3 cups water (add more as needed)
1/4 cup grape jelly or 1/8 cup molasses
3 pounds ground round meat
* You can add 1 can of kidney (red) beans if you'd like.
Brown meat, drain excess fat, saute vegetables on medium heat for 10 minutes. Add meat, spices and liquids. Simmer for 2 hours.
Serve with Ritz crackers and top with grated Cheddar cheese.
