Most of the actors on HBO's True Blood are having a bloody good time portraying vampires, werewolves and a variety of other supernatural beasties. But Jim Parrack, a.k.a. Hoyt Fortenberry, who seems to be one of the few humans residing in Bon Temps, isn't the least bit jealous of his costars. "I know they're having fun with all the supernatural stuff," the North Texas native says. "But I'm barely getting to the point in life where I understand what it is to be human, so there's plenty that's exciting for me to express about that." Indeed, this season's ill-fated romance between Hoyt and vampire Jessica (played by Debra Ann Woll) is one that just about any viewer can relate to. What could be more uniquely human than a story of love on the rocks? Season 4 of True Blood (8 p.m. CT Sundays) is quickly drawing to a close and it appears that Jessica has already moved on. But don't count Hoyt out just yet. "Alan Ball, our show's creator, says you can't be happy in love for more than an episode for it to be good TV," Parrack says, "and I think he's right!"
You and Debra Ann Woll have had great chemistry onscreen. What's your secret?
"She has been my favorite person on the show to work with. We're both kind of dorks about acting. We love it. We get together on set and rehearse and talk about it. Some actors, I think, don't want to seem too excited about acting. Maybe it doesn't look cool. But she and I love it too much to hide our enthusiasm."

True Blood’s Jim Parrack on His Character’s Dark Side, Working With James Franco, and Riding Jason Stackhouse
Did Hoyt Fortenberry and Jessica Hamby just break up — again? As the warm-blooded half of what was the most stable human-vampire relationship on True Blood, Hoyt’s the “normal” character in the show: He’s not a bloodsucker, shape-shifter, werewolf, werepanther, fairy, witch, medium, spirit, etc. But trying to live a simple life in Bon Temps has its own share of drama, as Jim Parrack, who plays Hoyt, can attest. We spoke with the actor about what's next for his character, his dream-sequence sex scene with Ryan Kwanten, and the movie he shot with his real-life best friend, James Franco.
Did you have any inkling that Hoyt and Jessica were headed for all this domestic trouble?
The general rule is to not jump into moving in with whoever you’re nutty for. But, you know, I was in a bad relationship, and the day I got out of it, I moved in with Ciera, and she ended up becoming my wife. Then again, I wasn’t facing issues like, “My mother is trying to kill my girlfriend.” [Laughs.] Now Hoyt and Jessica’s issues are more like, “I’m hungry. Where’s my food?”

Jim "Hoyt" Parrack interview with wehearttv
Jim Parrack is no newcomer to TV. He has appeared on several hit series including Criminal Minds, NCIS, Grey's Anatomy, CSI, ER...and one of my faves, Supernatural. Now THAT must have been a fun shoot- 3 born & bred- and proud- Texas boys together for a week of filming?! YeeeHaw!! Yahoo? Well, whatever it is hot Texas boys say...!
For the past 3 years Jim has starred on HBO's smash summer hit True Blood as the gentle, innocent and super-tall Hoyt Fortenberry. Jim brings life to the down home southern mama's boy with amazing ease and believability. I have to admit, Hoyt is among my faves in Bon Tempe and not just because he's completely adorable. Hoyt's a good boy, he has a good heart and he believes in people, almost blindly.
The Hoyt/Jessica love story is as tragic as it gets and Jim plays the heartbroken Hoyt with a tenderness we can all relate to. Well, relatively speaking. I mean I've never fallen in love with an actual vampire. Have you?

'True Blood' Star Jim Parrack (A.K.A. Hoyt) Talks: Season Finale, Alexander Skarsgard's Rising Fame & 'Twilight'
From MTV
Parrack says .."Something will happen. There will be a finale."
That Bill-Sookie-Eric love triangle sure has "True Blood" fans' tongues wagging, but we'd argue the season's most refreshing romance belongs to newborn bloodsucker Jessica and her sweet, mama's boy beau Hoyt. Faster than a vamp can run from Bon Temps to Dallas, actor Jim Parrack has gone from Jason's shy friend to a swoonworthy love interest. We caught up with the actor in Shreveport, Louisiana where's he's preparing to film the alien invasion flick "Battle: Los Angeles" alongside Aaron Eckhart, Michelle Rodriguez and Bridget Moynahan. We chatted with the Texas native about shaping the character of Hoyt, the upcoming season finale and what he thinks about "Twilight."
When Jim signed on to Alan Ball's sexy saga, he had no idea Hoyt would be getting a juicier storyline come season 2. In fact, he didn't know much about his character at all. The actor's never read the "Sookie Stackhouse" novels on which the series is based, mostly to keep his character original, so when it came time to embody Hoyt, Jim wasn't sure what to do.

True Blood Recipe: Maxine's Potato Chip, Tuna and Snicker Bar Casserole Surprise.
How can you not love this?
Even though Maxine is crazed and under Mary Ann's spell she is still Maxine and she always shows up at every event with a casserole. This is what I think is her casserole surprise for the upcoming Mary Ann nuptial...
Ingredients
1 bag Zaps "Who Dat?" regular flavor potato chips
1 can tuna fish (or you could use shredded crab cooked in Zatarain's crab boil)
3 cups crated mozzarella cheese
Louisiana Gold Green Pepper Sauce With Tabasco Peppers
LOUISIANA Cajun Seasoning
Salt
1 cup shaved coconut
4 Snickers bars
9 x 12 glass casserole
Generously layer the bottom with Zaps "Who Dat?" regular flavor potato chips, then cover chips with grated mozzarella cheese.
Place dollops of tuna fish or crab, garnish with shaved coconut and Snickers bars.
Then liberally douse with Louisiana Gold Green pepper sauce and season to taste with salt and LOUISIANA Cajun Seasoning.
Bake 350 oven for 25 minutes
Serve with Franzia (box ) Chardonnay
Here is your basic Potato Chip Tuna Casserole
How did I do ???

'True Blood' Vamp Scores Early Copy of 'Dead Space: Extraction'
From MTV -just how did Bill get an advanced copy of the Wii game Dead Space Extraction ? It's great that he did because it's the only thing that seems to keep Maxine Fortenberry calm...
"True Blood" fans probably know that the main vampire of the show, Bill Compton, owns a Wii. Last night's episode apparently revealed that he's also got an inside man at EA.
In last night's episode, a captive of Bill's, Maxine, was spotted playing "Dead Space Extraction," a game that's not coming out until late September. So either the events of this melo-dramatic blood sucking town are set in the future...or Bill is hardcore enough to nab an EA game a full month before its release.

Hoyt lists some of the things Maxine hates and she doesnt like hearing them ..
How many people do you know like Maxine ? Funny too that in the later books Maxine and Hoyt attend Sookie's Methodist church. Maxine in the early books also attends Gethsemane Baptist Church in Bon Temps.
My mama.Who hates Methodists.
(I got my reasons.)
And Catholics.
(Just priests and nuns.)
African-Americans.
(Hush, that's a secret.)
People who don't take care of their gardens.
People who park their trucks up on their lawn.
Ladies who wear red shoes.
(It looks cheap.)
Families with lots of kids. And checkered curtains and cats and dogs, and bait, every girl that I ever liked.

True Blood Recipe: Maxine Fortenberry's Broiled Cheese and chips sandwich
After being faced with with Mary Ann's "Hunter Souffle" I can handle this one and I knew just where to start, in France !
Now don't you dare laugh, check out the Croque Monsieur recipe below and let's change it up a little.
Maxine Fortenberry's Broiled Cheese and Chips Sandwich
*Country Crock margarine spread
*4 slices white Wonder Bread (in Dallas it would be Mrs Baird's)
*2 slices of Kraft American Cheese
*Lay's Potato Chips
Preheat broiler on its lowest setting. Spread margarine on one side of each bread slice. Place four bread slices buttered side up on an ungreased baking sheet. Place under broiler until light golden, about 3 minutes.
Remove and turn bread slice over and spread margarine on that side, then top each with a cheese slice. Place under broiler until light golden, about 3 minutes.
Remove from oven, place Lay's potato chips covering the top of melted cheese on one piece and then top with another of the slices cheese side down. Repeat.
Then MASH down with the palm of you hands (breaking all the chips) Serve.
Croque Monsieur (Broiled Ham and Cheese Sandwich)4 tablespoons unsalted butter
8 slices white bread
2 tablespoons Dijon mustard
8 thin slices boiled ham (about 4 ounces)
3 ounces Gruyere cheese, grated (about 2 cups)
Preheat broiler on its lowest setting. Place butter in a microwave-safe dish and heat until just soft, 15 to 30 seconds. Spread
1/2 tablespoon butter on one side of each bread slice. Place four bread slices buttered side down on an ungreased baking sheet. Spread each with mustard. Top each with two ham slices and 1/4 cup grated cheese. (You'll use half the cheese at this
point.) Top each sandwich with a bread slice, buttered side up. Place under broiler until light golden, about 3 minutes. Flip sandwiches over and sprinkle with remaining cheese. Return to broiler for about 2 minutes.
Prep time: 15 minutes

How Baby Vampires Pick Up Guys On True Blood
Ep 3 review from Io9
This week, we watched with big watery eyes as the baby vampire Jessica met a boy and batted her long eyelashes alluringly, at his pulsating jugular. True Blood recap, with spoilers, below.
True Blood tied up a few (but not many) loose ends this week, by freeing our boy Lafayette (more on Sookie and Bill's half-hearted kindness towards the bleeding prostitute later) and made Tara a bit more aware of what a tool Eggs is, guitar playing and weepy emotional talks aside.
Sookie was attacked by some horned beast and almost died — again — and Eric got his sexy back. A good episode all in all, but the best moment came from side characters Hoyt and Jessica.
